Eggplant Parmesan

This is great, I'm finding so many new ideas for cooking. I used to love cooking when I was vegetarian and then HATED it when I came to college and didn't have a stove to cook on. Back in high school I used to cook brown rice with sauteed onions, green beans, carrots, etc. Or I would make pasta dishes with fresh tomato, basil, and mozzarella. I really enjoyed cooking and having left overs for the next day. I think I'll load up recipes on this blog and then go back through during the school year when I need inspiration!

Back to the Eggplant Parmesan though, this recipe and the dish itself remind me so much of lasagna so it throws me off a little bit, but I might as well try it someday. I like fried eggplant, so we shall see.

Ingredients:
1-2 eggplant, peeled and thinly sliced
1 egg beaten
2 cups Italian seasoned bread crumbs
3 cups spaghetti sauce
1/2 package mozzarella cheese
1/4 cup parmesan cheese
1/4 tsp dried basil

1. Preheat oven to 350
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13in baking dish spread spaghetti sauce to cover bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and parmesan cheese. Repeat, ending with the cheese. Sprinkle basil on top
4. Bake for 35 minutes or until golden brown.

Veggie Burritos

I see myself eating many veggie burritos in the next week... I had a most amazing one today. Grilled veggies, black beans, rice, cheese, green salsa. mmmm... If I do decide to make them I'll probably forgo the cheese and add avacado or something. Perhaps I'll cook my own spanish rice too.
I'm so sleepy though. Eating big meals makes me tired and that burrito was HUGE!! Yet I still decided to eat the entire thing. Oh well I'm driving a sister to LA later tonight so I'll have time to nap off my meal and then I probably won't have time for dinner, just a snack.

Peach plum cobbler

I baked a peach plum cobbler last night. totally unhealthy but totally delicious!

It can easily be made vegan, I added milk however because I like milk.

1 peach
1 plum
1/3 cup water
1 cup of sugar, split
3/4 cup flour
1 tsp baking powder
3/4 cup milk (soy milk)
4 T margarine (butter)
Brown sugar (optional)
Cinnamon (optional)

Preheat oven to 350
Slice peach and plum and put in sauce pan with water and 1/2 cup of sugar. Let boil for 10 minutes while stirring.
Put butter into baking pan (I used a loaf pan) and place into oven to melt.
Whisk together the remaining sugar, flour, and baking powder. Slowly whisk in milk.
Take pan out of the oven and pour batter into the butter, do not mix!
Spoon fruit on top of the batter and butter, then pour syrup on top.
Sprinkle cinnamon on top and place in the oven for 20-25 minutes.
Sprinkle on brown sugar and bake for another 10- 15 minutes. Check the cake with a knife or toothpick.
Let cool for 25 minutes.
Enjoy with whipped cream or ice cream. (but I just ate it plain)

Veggie intro

I am going back to being vegetarian. I was a vegetarian in high school and I was vegan for a bit as well. After attending college I started to eat chicken and turkey again. I recently watched the movie food Inc and it has scared me into thinking that Eating meat is a bad thing. I feel like I will eventually become close to vegan once again, but that will come later.

I will be posting random tidbits about vegetarian life and recipes that I find.
